What materials and thicknesses suit flux-cored welding?

Flux-core is built for carbon steel and low-alloy steel from light structural up through heavy thick sections. Multi-pass flux-core welds heavy plate well and is one of the standard processes for shipbuilding and large structural work.

For stainless or aluminum, MIG or TIG is usually the better call. Flux-core stainless wire exists but it’s a niche application and most stainless work runs better on TIG.
